Vietnamese peanut sticky rice (Nấu xôi đậu phộng bằng nồi cơm điện)

♥ Ingredients:
(4 portions)

• ¾ cup raw peanuts, washed, drained
• ¾ cup glutinous rice, washed, drained
• salt
• water

Instructions:

1) Place prepared raw peanuts in the food processor. Add 1/2 tsp salt and 1 cup of water. Cook on high heat until the pressure cooker starts to rock. Lower the heat to medium and let it rocks for 10 minutes. Then turn off the heat and wait until the pressure releases on its own. Transfer peanuts into a colander and let them drain.

2) Place the prepared glutinous rice in the rice cooker. Add 1/3 tsp salt, 3/4 cup of water and the cooked peanuts. Start the rice cooker and after about 30 minutes, the peanut sticky rice is ready to eat.

You can eat it as is, or top with shredded coconut and sprinkle with a sesame condiment. I showed how to make the sesame condiment in my red bean sticky rice video: (start at 1:40)

You can also wrap in a tapioca wrapper and serve.

• ¾ cup nếp, vo sạch, để ráo
• muối
• nước

Cách làm:
1) Cho đậu, 1/2 tsp muối và 1 cup nước vào nồi áp suất. Nấu trên lửa cao đến khi nắp nồi áp suất quay thì hạ lửa trung bình. Tiếp tục nấu 10 phút. Tắt bếp. Đợi cho nắp van của nồi rớt tự nhiên. Đổ đậu ra rỗ cho ráo nước.

2) Cho nếp vào nồi cơm điện. Cho vào 1/3 tsp muối và 3/4 cup nước. Cho đậu phộng vào. Trộn. Bắt đầu bật nút nấu. Khoảng 30 phút sau là có xôi ăn rồi.

Rắc muối mè và dừa nạo lên xôi trước khi ăn, hoặc ăn không cũng ngon. Cũng có cách kẹp xôi vào bánh tráng kẹp xôi để tiện cầm ăn.

    Your son is such a cutie patootie!  I love it when you put him on.  You make this looks so easy that it's almost fool-proof for someone like me.  LOL!  The end result looks delicious (gotta have the coconut and sesame sprinkles, that's what elevates the flavor!).  Thanks for uploading another great video, Van.
